A typical Indian breakfast is filling but often low in protein: plain poha, aloo paratha with butter, or bread and chai. Here are ten vegetarian options, each with one simple change that makes it more balanced.

10 healthy vegetarian Indian breakfasts
1. Moong dal chilla
A batter of soaked moong dal, with onion, tomato and coriander. Boost: fill it with crumbled paneer.
2. Besan chilla
Ready in 10 minutes with no soaking. Boost: serve with a katori of curd.
3. Poha
Light and quick. Boost: add a handful of peanuts and peas, with curd on the side.
4. Vegetable upma or oats upma
Use more vegetables than suji. Boost: add roasted chana dal or peanuts.
5. Idli with sambar
Fermented rice and urad dal, with sambar for vegetables and extra dal. Boost: have a second katori of sambar instead of extra chutney.
6. Dosa or pesarattu
Pesarattu (green moong dosa) has more protein than a plain rice dosa. Boost: fill it with paneer or vegetables.
7. Sprouts chaat
Sprouted moong with onion, tomato, lemon and chaat masala. No cooking needed, which makes it good for hostels.
8. Vegetable dalia
Broken wheat cooked with vegetables. Boost: cook it with moong dal (dalia khichdi).
9. Stuffed paratha, the lighter way
Paneer, gobi or methi paratha with very little oil. Boost: have it with curd instead of butter.
10. Curd bowl
Curd with fruit and a few nuts or seeds. Boost: use hung curd (thicker, with more protein).

Watch-outs
- Packaged “healthy” cereals and muesli can contain a lot of sugar, so check the label.
- Chai with two or three spoons of sugar every morning adds up. Cut down gradually.
- Paratha with butter and pickle is high in fat and salt. Keep it for occasional days.
